1 medium-sized butternut squash, peeled, seeds removed, medium dice

3 cups vegetable broth
Pinches of nutmeg, salt, and pepper

Possible garnishes: roasted pumpkin seeds, ricotta cheese, gorgonzola cheese, sliced apples, herbed croutons.
